For FishingMagician.com I'm Eric Granstrom. I was going over past reports from the last year for me and Dave here and found a request that I completely forgot about. Dan posted on one of our reports and asked for our favorite recipes regarding our catch. For me, I love to do fresh-caught kokanee or sockeye on the grill. I'll filet the fish in halves, leaving the skin on. I'll take my time removing the rib bones. For the grill, I'll make a foil boat and basically poach the fish over a medium flame. I'll flop the filet on the aluminum foil, skin-down, then add a few pats of butter, chopped onions, thinly sliced lemon, and sprinkle Lawrey's Garlic Salt and some fresh-cracked black pepper. I'll leave it on the grill with the lid closed, but check often. When the fat on the fish turns white or the flesh flakes with a fork, it's done. I'll serve the tail section to new fish eaters because there are no bones. I like to have it with roasted red potatoes or rice, some fresh corn and a light, Caesar salad.
