For FishingMagician.com I'm Eric Granstrom. Several years ago while on vacation on the Washington coast, I went surf perch fishing fully not expecting to catch anything. Imagine my surprise when I caught four, nice keepers. I arrived back at the trailer with my catch to have Marion ask, "How you going to cook them?" I searched through the cupboards in the trailer to find a box of Ritz crackers. I filleted the perch, dipped them in an egg wash and rolled them in crushed up Ritz and fried them in some light oil. They were delicious! From then on, we always stocked our trailers and campers with extra Ritz crackers. They're now our go-to ingredient when preparing fish such as perch or walleye. I did the same trick a few months later when we were camping in the boat on Lake Roosevelt, catching walleye. It's very easy. I make sure to remove all the bones. Take four eggs and whip them up with a little milk and blend in some Lawry's garlic salt. I'll dry off the filets and dunk them in the egg wash. Then roll them in Ritz and lightly fry.
