For FishingMagician.com I'm Eric Granstrom. Well, it happened. I finally hit my limit on leftover turkey. We did two turkeys last Thursday. Marion had me spatchcock the 19-pound bird in the oven and I fried the 12-pounder in peanut oil. If you've never heard of spatchcocking before, join the club. It honestly made me a little nervous when Marion brought it up and said she'd seen it on Tic-Toc. I asked her if she should be watching that kind of stuff, LOL. Spatchcocking is cutting the backbone out of the bird and then flattening it out by doing a CPR move on the breast, cracking the breastbone. Both birds turned out wonderfully and we've been eating on them for SIX DAYS. I finally told Marion I'd had enough and was picking up a pizza on the way home. She said she had running around to do after work and I was on my own. I was on the couch in a pizza-coma as she came home and scurried about the kitchen prepping her dinner...Lake Roosevelt trout in the air fryer. She lathered it in mayonnaise and Johnny's and it was incredible. I can't wait to try walleye in the air fryer! Until next time, Good Fishing!
